Sugar 1 cup
Oil, vegetable 3/4 cup
Eggs 2 large
Flour, all-purpose 1-1/2 cups
Baking soda 1 tsp
Cinnamon 1 tsp
Salt 1/8 tsp
Carrots 1-1/2 cup grated
Walnuts 1/2 cup chopped

Directions

Preheat the oven to 350 degrees F. Grease and lightly flour a 9x5 inch loaf pan.

Combine granulated sugar, vegetable oil and eggs in a large bowl and mix well.

Sift flour, baking soda, cinnamon and salt into a medium bowl. Add to sugar mixture and mix well.

Add carrots and walnuts to flour mixture and mix well. Spoon into prepared loaf pan.

Bake bread until a toothpick inserted in the center of the loaf comes out clean, about 1 hour. Cool in the pan for 1 minutes. Transfer loaf to a wire rack to cool completely.
