Directions

Thread 4 to 6 pieces of fruits (except mangoes) on each of twenty-four 6-inch skewers. Place skewers on large serving platter; set aside.

In food processor, place mango pieces and pineapple preserves. Cover and process until smooth; pour into small serving bowl. Serve kabobs with mango coulis.

Comments / Suggestions

Simplify
Instead of making kabobs, serve fruit in a large glass bowl with the coulis in a separate bowl. Include toothpicks, and let guests help themselves.

Special Touch
Cut the watermelon with mini star-shaped cookie cutters. Place skewers in a clear glass vase. Or cut a fresh pineapple (including top) lengthwise in half. Place pineapple on serving platter, and insert skewers into pineapple. Serve coulis in a pretty cocktail glass.
